Dressed weight (hanging weight) is what remains after removing hide, head, feet, and organs. Cattle dress at about 62% of live weight. A 1,200 lb steer yields about 744 lbs hanging weight and roughly 500 lbs of packaged meat.

  • Cattle: 60–64% dressing percentage
  • Pigs: 70–75% (higher because of usable fat)
  • Goats: 48–52% dressing percentage
  • Sheep: 50–54% dressing percentage
