Frequently Asked Questions

Q

How much rice goes in each dolma?

Each regular dolma uses about 8g of uncooked short-grain rice mixed with herbs and onion. The rice cooks inside the grape leaf during simmering, expanding to fill the roll. A batch of 36 dolmas needs 288g of uncooked rice.

  • 8g uncooked rice per regular dolma
  • Use short-grain rice (Egyptian or Arborio)
  • Rice is mixed raw with herbs and onion
  • Never pre-cook the rice — it cooks inside the leaf
  • Mini dolmas: 5g rice each; Large: 11g each

Large11g1.24–5
Q

How many grape leaves do I need per dolma?

Plan 1.2 grape leaves per dolma to account for tears and pot lining. For 36 dolmas, you need about 43 leaves. Jarred grape leaves come in jars of 50–70. Fresh leaves should be blanched 30 seconds before using.

  • 1.2 leaves per dolma (extra for tears and lining)
  • 36 dolmas = ~43 grape leaves
  • Standard jar: 50–70 leaves
  • Blanch fresh leaves 30 seconds, then ice bath
  • Trim thick stems with scissors before rolling
Q

What is the difference between vegetarian and meat dolmas?

Vegetarian dolmas use rice with fresh herbs (mint, dill, parsley), onion, and olive oil. Meat dolmas add 10g of ground lamb or beef per piece and use less herbs. Vegetarian dolmas are served cold or at room temperature; meat dolmas are served warm.

  • Vegetarian: rice + herbs (3g) + onion, served cold
  • Meat: rice + ground meat (10g) + herbs (2g), served warm
  • Vegetarian: heavy on mint, dill, and olive oil
  • Meat: seasoned with allspice and cinnamon
  • Both use lemon juice for brightness
Q

How long do dolmas need to cook?

Simmer dolmas 45–60 minutes covered, weighted with a plate to prevent unrolling. The liquid should just barely cover the dolmas. The rice is done when tender throughout. Let them rest 15 minutes in the pot before serving.

  • Simmer covered for 45–60 minutes
  • Weight with a plate or heatproof dish
  • Liquid: olive oil + lemon juice + water to just cover
  • Rice should be tender when pierced
  • Rest 15 minutes in pot before serving
