What sugar should I use for water kefir?

White sugar is the most commonly used and produces a clean, neutral-flavored water kefir. Raw cane sugar and coconut sugar provide more minerals that feed the grains. Brown sugar adds a mild molasses flavor. Use 50–55 grams of sugar per liter regardless of type. Avoid honey in primary fermentation as it has antimicrobial properties.

Water kefir and milk kefir use different grain cultures and substrates. Milk kefir grains are white, cauliflower-like clusters that ferment dairy milk into a thick, tangy yogurt-like drink. They cannot be used interchangeably.
