A standard ratio is 3 tablespoons (45g) of water kefir grains per liter of sugar water. For milder water kefir, use 2 tablespoons per liter. For stronger, faster fermentation, use 4 tablespoons per liter. The grains ferment the dissolved sugar into a lightly carbonated, probiotic beverage.

White sugar is the most commonly used and produces a clean, neutral-flavored water kefir. Raw cane sugar and coconut sugar provide more minerals that feed the grains. Brown sugar adds a mild molasses flavor. Use 50–55 grams of sugar per liter regardless of type. Avoid honey in primary fermentation as it has antimicrobial properties.
Water kefir primary fermentation takes 24 to 72 hours depending on temperature. At room temperature (75°F / 24°C), expect 24–48 hours. Cooler temperatures (68°F) slow fermentation to 48–72 hours. Warmer conditions (82°F) can finish in 18–36 hours. Taste daily — when sweetness is reduced and slight effervescence appears, it is ready to strain.
Water kefir and milk kefir use different grain cultures and substrates. Water kefir grains (tibicos) are translucent crystals that ferment sugar water into a light, fizzy probiotic drink — dairy-free and vegan. Milk kefir grains are white, cauliflower-like clusters that ferment dairy milk into a thick, tangy yogurt-like drink. They cannot be used interchangeably.
