Dairy goats produce 0.5–1.5 gallons per day depending on breed. Saanens are the highest producers at about 1.5 gallons. Nigerian Dwarfs give less volume but with the richest butterfat at 6.5%.
Cows hit peak production 4–10 weeks after calving (early stage). Mid-lactation drops to about 75% of peak. Late lactation before dry-off runs at 50% of peak. The dry period lasts 60 days before next calving.
Roughly 10 pounds of milk makes 1 pound of hard cheese. Soft cheese yields more (6–8 lbs milk per lb cheese). Higher butterfat breeds like Jersey make more cheese per gallon than Holsteins.
