Pro Tips

Use a meat thermometer: Time is an estimate. The only reliable way to know your turkey is done is when the breast reaches 165°F and the thigh reaches 175°F.
Rest before carving: Let the turkey rest 20–30 minutes after removing from the oven. The internal temp rises 5–10°F during resting and juices redistribute.
Emergency thaw: Forgot to thaw? Cold water thaw takes about 30 minutes per pound. Submerge the turkey in cold water, changing water every 30 minutes.
Two smaller turkeys: For groups over 15, consider two 12–14 lb turkeys instead of one large bird. Smaller turkeys cook more evenly and have better skin-to-meat ratio.

Frequently Asked Questions

Q

How many pounds of turkey do I need per person?

Plan for 1.25 pounds of bone-in turkey per adult and 0.75 pounds per child. For boneless turkey breast, use 0.75 pounds per adult and 0.5 pounds per child. Add 25–50% more if you want leftovers for sandwiches and soup.

  • Bone-in whole turkey: 1.25 lbs per adult, 0.75 lbs per child
  • Boneless breast: 0.75 lbs per adult, 0.5 lbs per child
  • Example: 10 adults + 4 kids bone-in = about 15.5 lbs before leftovers
  • Add 25% for some leftovers, 50% for lots of leftovers
  • Round up to the nearest whole pound when shopping

Q

How long does it take to thaw a frozen turkey?

In the refrigerator, allow 24 hours for every 4–5 pounds of turkey. A 15-pound turkey takes about 4 days to thaw in the fridge. For faster thawing, submerge in cold water and change the water every 30 minutes: this takes about 30 minutes per pound.

  • Fridge thaw: 24 hours per 4–5 lbs (safest method)
  • 10 lb turkey: ~3 days in the fridge
  • 15 lb turkey: ~4 days in the fridge
  • 20 lb turkey: ~5 days in the fridge
  • Cold water thaw: 30 minutes per pound (faster but requires monitoring)

Q

How long do you roast a turkey at 325 degrees?

At 325°F, an unstuffed turkey takes about 13 minutes per pound and a stuffed turkey takes about 15 minutes per pound. A 15-pound unstuffed turkey roasts for roughly 3 hours 15 minutes. Always use a meat thermometer: the breast should reach 165°F.

  • Unstuffed: 13 minutes per pound at 325°F
  • Stuffed: 15 minutes per pound at 325°F (stuffing slows heat)
  • 12 lb unstuffed: about 2 hr 36 min
  • 15 lb unstuffed: about 3 hr 15 min
  • 20 lb unstuffed: about 4 hr 20 min
Q

What temperature should turkey reach internally?

The breast should reach 165°F and the thigh should reach 175°F for safe consumption. Remove the turkey when the breast hits 160°F because carryover cooking raises the temperature 5–10°F during the 20–30 minute resting period.

  • Breast target: 165°F (remove at 160°F for carryover)
  • Thigh target: 175°F for tender dark meat
  • Stuffing inside turkey: must also reach 165°F
  • Rest 20–30 minutes before carving (temp rises 5–10°F)
  • Insert thermometer in thickest part of breast, not touching bone
Q

Is it better to cook a stuffed or unstuffed turkey?

Unstuffed turkeys cook faster and more evenly, reducing the risk of overcooked breast meat. The USDA recommends cooking stuffing separately because getting the stuffing inside the bird to 165°F often means overcooking the meat. Stuffed turkeys add about 2 extra minutes per pound.

  • Unstuffed: cooks faster (13 min/lb), more even cooking
  • Stuffed: cooks slower (15 min/lb), stuffing absorbs drippings for flavor
  • USDA recommendation: cook stuffing separately for food safety
  • Stuffed turkey risk: breast overcooks before stuffing reaches 165°F
  • Compromise: cook stuffing in a casserole dish, baste with drippings
